Kasoori Methi: Fenugreek is a lesser known Indian spice with a strong aroma and a bitter taste. Mash leaves and sprinkle over curries and dry vegetable dishes just before serving for an unforgettable flavor. Commonly used as a substitute for fresh methi leaves in aloo methi, a dry vegetable dish that combines potatoes with these leaves.
Khoya: Khoya is a dairy product. Khoya is used in making many sweets dishes. In India there is no problem in getting khoya from the stores. It is considered as one of the important dairy products and in many houses it is very commonly used. However, outside India, people do not know what khoya is, and it is not available in the stores. Khoya can be made at home, though the method is little tedious. It is prepared by boiling and reducing the milk to a semi-solid stage. For more information visit this Link
Kewra Water: This is an extract that's distilled from pandanus flowers, and used to flavor meats, drinks, and desserts in India and Southeast Asia. Some brands of Kewra water are artificially flavored, so check the label. Substitutes: Kewra essence (more concentrated, so use less) OR rose water.


Kalmi Saag: Known as Water Spinach. The plant is marketed in bundles, resembling European water-cress, with small leaves attached to the main stem. Water Spinach can be grown in water or in moist beds on land. (Chinese: Ung Choy, Yeung Choy, English: Convolvulus, Filipino: Kang Kung) Available in Chinese or Indian grocery stores.
