Spicy Crispy Fried Chicken

If you like fried chicken this is it! With a crunch to the batter and the spices it makes a great snack or a main meal. I like to serve it with mashed potatoes, baked beans and a coleslaw!!

Ingredients

- 8 pieces, breasts(cut in half)/whole chicken thigh/drumstick joints Chicken
- 3 tsp (meat curry powder) Curry Powder
- 2 tsp Red Chili Powder
- 2 tsp Sugar
- 2 tsp Salt
- 2 tbsp Maida
- 2 tbsp Chick peas Flour
- 2 beaten Egg
- 4 oz (crushed like breadr crumb) Corn Flour
- 1 lb (self rising flour) All Purpose Flour
- 1 tsp Salt
- 1 tsp Soda Bicarbonate
- 1 tsp White Pepper
- 1 tbsp, meat curry powder Curry Powder
- 3/4 cups Chick peas Flour
- 1/2 tsp Milk
- 1/2 tsp White Pepper
- 1/2 tsp Salt
- 1 oz All Purpose Flour
-  as reqd. for deep frying Cooking Oil

Instructions

1. To season chicken, mix everything from meat curry powder to white pepper.

2. Marinate chicken pieces with the seasoning for at least 2 hours.

3. Prepare the batter: Mix everything from Curry powder to all purpose flour.

4. Roll chicken in the coating mixture pressing the chicken well with the coating. Then dip in the batter. Repeat the process once more and deep fry over high heat for about 1 minute, then turn heat down a bit and cook till chicken is golden brown and cooked through. Drain on a rack.

5. Note:- I fry the chicken in two woks rather than one as it works better this way. Try it and let me know what you think please. If you have a deep fat fryer use it!! If you are cooking it for the children cut down on the curry powder and chili or leave it out.
